Cooking Matters Para Adultos at the Broward Health Dept.

Dear Friends,

We have completed our second Cooking Matters for Adults class at the Broward Health Dept. We want to congratulate all our participants who attended and learned how to cook healthy meals on a budget. Our nutritionist Johanna and Chef Jeff delivered the classes and had a blast. Some of the recipes that we made in class were Black Bean and Veggie Quesadillas, Mango Salsa, and Chicken Haitian Style with Quinoa.

It was a pleasure working with this organization and looking forward to doing some more classes next year

Cooking Matters at JFK Library Hialeah

Dear Friends,

We have just completed a Cooking Matters for Families Class at the JFK Library in Hialeah. The class went great and all the families were very happy. Our nutritionist volunteer Macarena and myself lead each class and spoke about the importance of having a balanced meal. Some of the recipes that we made in class were: Turkey Tacos, Chinese Veggies and Rice, and Egg Burritos. We are looking forward to a great partnership with the library and to many more nutrition workshops and classes for parents and kids.

Recipe of the Week

Cilantro-Lime Grilled Chicken Skewers

Serves 4

 

Marinade

1 Cup Chicken Stock

4 Fresh limes juice and zest

1/4 Cup Fresh chopped cilantro

1 Tsp. Minced garlic

1 Tbl. Extra virgin olive oil

1/2 Tsp. Crushed red pepper

1/2 Tsp Salt

1/4 Tsp. Ground pepper

 

4 4oz. Chicken breasts, each breast cut into 6 pc.

1/2 Fresh pineapple, large chunks

16 Wooden skewers, soaked in water

 

Combine first 7 ingredients for the marinade, reserve.

Prepare chicken and pineapple, skewer alternating chicken and pineapple.

Lay skewers in a single layer cover with marinade wrap and chill, allow marinading for 30 minutes to 2 hours.

Remove skewers from marinade, grill skewers.

Recipe of the Week

Black Bean Brownies
Serves 8

Ingredients:

1 15oz. can salt free black beans, drained and rinsed
1 ½ cups agave syrup
2 Tbsp. ground flax seeds
1 Tbsp. vanilla extract
1 tsp. baking powder
½ tsp. baking soda
½ cup raw cocoa
¾ rice flour
1 cup semi sweet chocolate chips

Directions:

Preheat oven to 350 degrees. Put beans and agave syrup into bowl of a food processor fitted with the “S” blade and process until smooth. Add the flax seeds, vanilla extract, baking powder, baking soda, and cocoa and process again. Add the flour and pulse until just combined. Stir in the chocolate chips. Pour the batter into an 8×8 –inch square silicone baking pan. Bake for 30-35 minutes until the middle does not jiggle and a toothpick inserted into it comes out clean
