Homemade Caesar Dressing

Ingredients:

2.5 cloves fresh garlic

1 C skim or low fat cottage cheese

1.5 cups of fat free yogurt

½ cup grated parmesan cheese

½ tablespoon freshly squeezed lemon juice

½ tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

 

Method:

Combine all ingredients in blender or food processor and blend until smooth

Store in tight container and can keep up to 2 weeks refrigerated

This week at Children’s Harbor…

For week 4, we reviewed fast food and healthy substitutes.   We asked the  teens what   feel a typical value meal at a fast food restaurant would have, and one teen said, “1800 calories,” which was close.  It was researched that 1700 calories was the average calorie intake with a  fast food meal, with soda, large fries, and a burger.   We also asked them what they felt would be a healthy substitute and one teen said, ”a steak.”  I the chef and I indicated that moderation is key with anything you do, and treating  yourself once a week is Ok as long as you maintain a healthy diet through MyPlate the other 6 days of the week, so they won’t overdue  it down the line.   We then asked the teens what they felt saturated and unsaturated fats were, and one teen said, “They put on extra weight!”  We then put together a Blubber Burger, which was a about 8 teaspoons of vegetable cooking oil and put it on two buns and the kids were shocked at the amount of fat they put in their bodies when they do decide to eat a fast food meal.

Recipe of The Week

Apple Streusel Smoothie

 Level: Easy

Servings: 6

Ingredients:

10 each               Apples cooked (gala or honey crisp)

½ cup                  brown sugar

½ teaspoon        cinnamon

¼ teaspoon        nutmeg

¼ teaspoon        ground clove

2 cups                 ice

Method:

Heat a medium pan over medium heat

Cook apples until soft

Add apples, sugar, cinnamon, nutmeg, ground clove, and ice to blender

Blend until smooth

During our Shopping Matters tour this week…

FLIPANY did a healthy grocery store tour with parents of preschoolers last week that was awesome! 

The participants really enjoyed the Shopping Matters tour

and learned how to purchase healthy foods while watching their dollars. One participant mentioned that she will read the nutrition panel and ingredients and not get fooled by what the package says. These tours are really helpful especially for parents of preschool children. Many parents have asked me about recipes and how to include more veggies in their meals. It has been a pleasure meeting parents that want to change certain behaviors and improve their overall health.
